Breakfast Muffin

Shopping & Ingredients List

300g Plain Flour 6 Ripe Bananas, mashed 6 Eggs, beaten 70g Ground Flaxseed 50g Ground Almonds, chopped 1 tsp Ginger 1 tsp Cinnamon 1 tsp Baking Powder 1 tsp Bicarbonate of Soda 1 tsp Vanilla Extract 4 tbsp Honey

Method

  1. Preheat oven to 180c (160 fan), 350F, gas mark 4. Use muffin baking tray & line with paper cases.
  2. In a large bowl, mix the honey, eggs, vanilla & mashed bananas. Beat well.
  3. In another bowl combine the flour, ground almonds, baking powder, bicarbonate of soda, flaxseed & spices. Then gradually add the dry mix to the wet one. Mix well.
  4. Fill muffin cases allowing some room for rising. Bake for 20-25 mins. Allow to cool. Serve. Can store in airtight container or freeze.
